Dauphin’s signature pork belly (a delicacy – don’t let the name fool you) features pork from the Fatback Pig Project. Founded by Jim ‘N Nicks Barbecue, the Fatback Collective includes chefs, restaurateurs and entrepreneurs committed to sustaining the small hog farm tradition of the Deep South. Old school breeds raised naturally and processed close to the farm produces pork known for its flavor and tenderness.
